A coferment of 55% Cabernet Franc and 45% Petit Manseng. Looks like a baby, I dunno what that means, but it looks lean – But its not. The coferm is magic made in nirvana my friends. This an elegant, lush and generous red. The fruits are ripe and the edges are not edges at all – they are soft and supple. Yummo. 217 cases produced.
FRUIT SOURCES
Bethany Ridge Vineyards for both Petit Manseng and Cabernet Franc, Farmed by Walsh Family
WINEMAKING
We took what we learned from Wolves and Los Idiots and came up with a theory that created Dos Idiots. In terms of the red/white co-ferment approach, this wine is evolving. While 2020 saw all the Petit Manseng on the skins, in 2021 we directly pressed half of it, and in 2022 we pressed all the PM as juice. It was then added to the Cabernet Franc (which was 15% whole cluster) and then co-fermented. Aged for 11 months in neutral French 228L barrels.
